It's been raining for a million days, and, working in a preschool I am gifted a lot of mugs. These things might seem weird together to you, but I can make it work.
I'm itching for a chocolate fix. I'm still wearing winter clothing on May 22nd. I'm waaaaaay too lazy to venture out to the grocery store to scratch that itch. And I'm unloading the dishwasher which happens to be full of mugs. I'm also woefully low on baking supplies because of aforementioned laziness.
This actually began as a quick internet search for a use for cashew meal. I scored some a while back and decided today is the day I'll use it. The interwebs search was not helpful unless I want to make some hockey-puck Paleo baked goods, but was kind enough to suggest that I replace some flour in standard baking recipes for cashew (or almond) meal. Done, and done.
So I made a regular Pioneer Womanish mug cake and after a bite or two was pretty happy, also a little queasy because these cakes are rich. As I do lately, I veganized it.
In a side-by-side test, Man, Girl and Boy all massively favored the vegan version, much to their displeasure. They're not on board with this vegan shit. They'll come around. This mug cake may have earned some points in my favor.
Mix the following in a standard coffee mug:
2 Tbsp flour. Just regular flour. Don't get all "whole wheat" on my ass.
1 Tbsp finely ground cashews or almonds. Or just use all flour. Whatevs.
3 Tbsp cocoa powder
2 Tbsp sugar
1/4 tsp baking powder
dash of salt
3 Tbsp chocolate chips
2 1/2 Tbsp coconut oil
2 1/2 Tbsp plain almond milk
Microwave on high for exactly 90 seconds. Let cool 5 minutes and devour.
